From Cleopatra to Michelangelo, roses have famously infatuated us with their heady scent, healing powers, and delicious flavor. Writings documenting their uses can be found across almost every ancient culture, and fossil records show they've been around for 40 MILLION years. We began experimenting with roses in cooking around 1750 BCE in Anatolia (modern day Turkey) and our love affair with this distinctive, floral flavor is stronger than ever across the Middle East and Europe.🌹

What's better on a chilly morning than a hearty Turkish Breakfast? (maybe nothing!) ⁠ ⁠ Two fried eggs, Turkish beef sausage, kashkaval cheese, spices & herbs served with pita and shepherd's salad. Available on Saturdays and Sundays until 2pm!⁠ ⁠

Today a historic landmark, Yavne 18 St. in Tel Aviv is where my late grandfather opened his first store after moving to Israel from Turkey.⁠ ⁠ It wasn't a restaurant and he wasn't a chef, but spending time with him there during my childhood shaped how I still cook today. He taught me the value of hard work, and the importance of loving and respecting what you do each day.⁠ ⁠ Thanks to his dedication and love of food, our family always had an abundance of fresh market produce, fish, meats and Turkish delicacies, all of which my grandmother would cook for us, our neighbors, friends, and even strangers. ⁠ ⁠ To this day, my memories of those times are what drives me to work, cook and eat the way I do, so it is only fitting to pay homage to my late grandfather Albert Medina (who I'm named after), by having the image of this special building represent TLV Austin. Thanks to @rogersdesignhouse for turning this special place into our beautiful graphic.

Avimael, or 'Avi' as we all like to call him, is the backbone of our kitchen. Day in and day out he makes sure that we are set up and prepped for our extremely busy lunch service. He likes to keep everything in check and make sure everyone's doing what they're supposed to. Avi is a well polished expediter, and makes sure we don't miss any tickets when we're cracking up from Serbio's jokes.⁠ Thank you Avi, for always making sure that TLV runs smoothly!
